Chicken Rollups

Another fantastic thing I've found on Pinterest is wonderful, wonderful blogs! One of them, Plain Chicken, has become one of my favorites.

Since I don't eat red meat, sometimes finding chicken recipes that haven't been overdone in my house is hard.
Luckily, Steph loves chicken, so most of her recipes are chicken related.

The chicken rollups recipe was pretty easy & it was yummy.

2 (8 ounce) cans Reduced Fat Pillsbury Refrigerated Crescent Dinner Rolls
1 (10 3/4 ounce) can 98% fat free cream of chicken soup, undiluted
3/4 cup grated cheddar cheese or swiss cheese (or any cheese of choice)
1/2 cup milk

Filling
4 ounces cream cheese (very soft)
2 tablespoons butter (very soft but not melted)
1/2-1 teaspoon garlic powder
1 tsp minced onion flakes
2 large cooked chicken breasts, finely chopped
1/2-3/4 cup finely grated cheddar cheese
1/2 tsp seasoning salt
1/2 tsp ground black pepper (or to taste)
2 Tbsp. milk
1-2 cup grated cheddar cheese (for topping)

Preheat oven to 350°F. Spray a 9x13 dish with cooking spray. Mix together milk, 3/4 cup cheese and undiluted chicken soup (can season with black pepper if desired).

For the filling --- (make certain that the cream cheese and butter are very soft) in a bowl, mix the soft cream cheese with butter until very smooth, then add in garlic powder. Add in the chopped chicken, onion and cheddar cheese; mix well until combined. Add in 2 tablespoons milk; mix to combine (add in a little more if the mixture seems too dry). Season with seasoned salt or white and black pepper to taste. Unroll the crescent rolls. Place 1 heaping tablespoon chicken mixture (or a little more) on top of each crescent triangle, then roll up starting at the thicker end. Drizzle a small amount of soup mixture on the bottom of the dish. Then place the crescent rolls seam-side down on top of the creamed mixture in the casserole.
Drizzle the remaining sauce on top (you don't have to use the full amount of cream sauce, just use as much as desired) and sprinkle with 1 cup (or more) grated cheese, or amount desired. Bake for about 30 minutes.

**The only thing I would change w/this recipe is maybe no garlic & real onions instead of flakes. I think the garlic left a funny flavor to it.

My Monday Meal - Chicken sandwich

1 pound ground chicken (we used boneless/skinless breast)
1/2 cup shredded sharp cheddar cheese
1/3 cup grated parmesan cheese
1 teaspoon minced garlic
1/2 teaspoon salt
1/2 teaspoon pepper
1/3 cup mayo
4 onion kaiser rolls, split
8 strips bacon cooked until crisp
1 large tomato - sliced
4 leaves romaine lettuce

mix chicken, cheeses, garlic, salt & pepper. Form into 4 burgers about 3/4 in. thick, making a slight depression in center of each patty (this helps keep burgers flat as they cook).

cook on grill or stove top...toast buns on in pan or on grill - add bacon, lettuce & mayo.

So yummy!

Serve w/grilled asparagus.

My Monday Meal - Baked Chicken Nuggets

3 skinless/boneless chicken breasts
1 cup Italian seasoned bread crumbs
1/2 cup grated Parmesan cheese
1 teaspoon salt
1/2 cup butter, melted

Preheat oven to 400 degrees. Cut chicken breasts into 1 1/2-inch sized pieces.
In a medium bowl, mix together the bread crumbs, cheese, & salt. Mix well. Put melted butter in a bowl or dish for dipping.
Dip chicken pieces into the melted butter first, then coat with the breadcrumb mixture. Place the well-coated chicken pieces on a lightly greased cookie sheet in a single layer, and bake in the preheated oven for 20 minutes.

My Monday Meal - Cottage Cheese Pie

Ingredients:


1 9" unbaked pie crust
1 small onion, chopped
2 cloves garlic, minced
1 lb. ground meat – we used turkey
1/4 tsp. pepper
1/4 cup ketchup
2 Tbsp. mustard (this was too much for my family – we’re not big mustard fans)
2 Tbsp. flour
2 eggs, beaten
1 cup cottage cheese
2 Tbsp. grated Parmesan cheese

Brown together onion, garlic, and meat. Drain any excess fat. Add pepper, ketchup, mustard, and flour to skillet and cook and stir for 3 minutes. Turn this meat mixture into the pie crust lined pan.

Beat eggs and add cottage cheese and Parmesan cheese. Pour this mixture over meat in the pie pan. Bake at 350 degrees for 30-40 minutes, or until filling is set, crust is golden, and topping is set and starting to brown in spots.













To me it sort of tasted like lasagna. The kids didn’t really like it much,  (,ight have been the mustard?) but Dennis & I did. Anyway, we probably won’t make this one again until the kids are a little older….

We served it w/green beans, fresh salad & Italian bread.

For dessert – Éclair cake – YUM!

My Monday Meal - Cheesy Chicken Green Bean Casserole

Ingredients:
6 Tablespoons butter, cut into cubes
6 Tablespoons all-purpose flour
1 1/2 cups chicken broth
1/2 cup whole milk
1/2 teaspoon salt
1/8 teaspoon pepper
2/3 cup shredded Parmesan cheese, divided
8 cups fresh green beans
2 cups cooked cubed chicken
1 small can french fried onion rings





Directions:
1. Melt butter in a large saucepan. Stir in flour until smooth.
2. Slowly add broth, milk, salt and pepper. Bring to a boil, cook and stir for 2 minutes or until thickened.
3. Stir in 1/3 cup of the Parmesan cheese until melted.
4. Add beans and chicken, combine well.
5. Pour mixture into a greased 2 quart baking dish and sprinkle with the remaining 1/3 cup Parmesan cheese. Sprinkle the onion rings on top of cheese.
6. Bake, uncovered, in a 375 degree F oven for 15-18 minutes or until golden brown.

My Monday Meal - Hashbrown Burger Casserole


1 lb Burger (we prefer turkey burger)
1 can of green beans (or any canned veggie would work)
4 cups frozen, shredded hashbrowns
1 can cream of mushroom soup
1 cup milk
Shredded cheese – your choice of flavor
6 large slices of onion



Preheat oven to 350.
Fry & ground burger.
Spray a cake pan w/pam & add all of the hashbrowns
After the meat is cooked, add to the top of the hashbrowns & spread out.
Drain green beans & add to the top & spread out.
Mix milk & cream of mushroom soup & pour over food.
Add cheese – we used abt 2 cups of cheddar & mozz mix, but it’s up to you on how cheesy you want it.

Cover w/foil & bake for ½ hr. Remove from oven & add onion slice on top, re-cover & bake for another 15 mins.
Turn oven off & remove foil. Leave in oven for 15 mins & then serve.

Serve with salad & fresh baked bread. Strawberry jello w/bananas & whip cream for dessert!

My Monday Meal...Chicken Cresent Rolls...


I'm proud of myself for coming up with this recipe on my own.  Even Dennis was surprised! 
He kept asking me, are you sure this was all you??  Yes, it was.  I saw other recipes that had a few of the ingredients together, but not one like this.  Pinterest had great recipes, but none put this together and honestly, I don't see a lot with the french onion soup mix.  Man, I love that stuff!

4 boneless/skinless chicken breasts
2 pck crescent rolls
Mozz cheese
French onion soup mix dry

Preheat oven to temp listed on Crescent rolls

Brown chicken on both sides in fry pan. Add water to cover chicken, add 1 packet of dry French onion soup mix & cover.

Cook until chicken is completely cooked through.

Cut into chunks.

Open crescent rolls & pinch together seams of 2 triangles to make 4 different crusts. Add chicken chunks & as much mozz cheese as you want. Then add the other package of crescent rolls, pinching seams of 2 triangles together, than placing them on top of the chicken mixture & pressing the top & bottom crescents together.

Bake for 12-14 mins (or as long as the rolls require). Serve w/green beans & salad. Mint Chocolate Chip ice cream for dessert equals YUM!

And really, the combination possibilities are numerous.  We also made these with pepper jack cheese, sharp cheese and colby. 
Instead of French soup mix, we did dry Italian dressing...the crecent roll has the flavor bake right in - it's sooo good!
