S.O.S.

No – don’t send help – this is all about the food.  I remember when I was little, my grandparents used to make a meal that my grandpa called SOS or shit on a shingle.  I know that for years my mom made it as well.  I know I liked it and I even recall making it after moving out.

But after I stopped eating red meat (16 yrs ago), I made a revision to the recipe, but I couldn’t remember what it was.  Then my memories started to collide and I felt like this was the recipe all along….

I googled the recipe, but all I could find were recipes that made their own roux (which I later found out is how my grandpa made it)…and I know at 25, I was not making my own roux!  Hell, I don’t even want to make it right now.  So I kept searching, positive cream of mushroom soup was involved.  I gave up and asked my mom how she makes it.  She said she uses brown gravy for hers.  Nope, not how I have made it within the last 16 years.

I continued to search for a recipe similar to what I (sort of) remembered.  The problem is, my memory sucks.   Finally, I found one that was close to what I would make.  I played with it a little bit, but in the end, it turned out pretty yummy.  Dennis ate about ½ of the mixture, so that’s gotta be a good sign, right?

1 lb of turkey burger, crumbled
2 cans of cream of mushroom (low sodium) soup
¾ can of milk
Salt (to make up for the low-sodium soup) & pepper to taste

Once turk burg is cooked and crumbled, add soup & milk to frying pan, cook on low/med until it becomes a nice gravy, add S&P, stir well and let simmer on low for about 5 mins.

We serve with white bread.  We put one piece down, put some of the mixture over it, then add the 2nd piece of bread & add a little more mixture.  Serve with some mixed veggies and enjoy!

Second Wind

Right now, the girls are fully immersed into fall sports.  I mean, holy volleyballsoccercheerrunning season.  I am exhausted and even though I'm not the one out there running or volleying, I have no energy by the time we walk into the house at (most evenings) 8 pm!
I keep telling myself I need to do a weekly meal prep.  I know it will make life easier, but I also know that it is just a little more work than I want to participate in.
Our meals have been on repeat...spaghetti, sloppy joes, cold cut sandwiches, frozen pizza, turk burg w/mac & cheese.
Everyone is over it.
During one of the many practices, I decided to look at pinterest for dinner ideas, instead of reading my book.

Pinterest.  I haven't been on to browse & pin in...a year...two?  Yes, I have looked up specific things - but I don't browse like I used to.
While going through the INSANE amount of pins on my recipe board (let's get real - I will NEVER cut the girls sandwiches in cute little shapes of animals) I decided I would clean it up.

Have you ever tried to 'clean up' your pinterest boards?  Does that happen?  Well, I tried.  I was able to get about 3 boards cleaned, all the while thinking the whole idea was dumb.  I have 3,000 pins!  It's safe to say I will probably never do 2,991 of them.  Ugh.

Anyway, while I was cleaning out the recipe idea one, I ran across this yummy looking dinner idea.
So, that evening, after practice, we ran to the store to get a few of the missing ingredients and I made it for dinner.
While it was VERY good and this is something we will definitely make again in the future, attempting a new recipe at 7:45 in the evening is ridiculous!!  But I had caught my 2nd wind at that point and was ready to cook.

Our family is NOT gluten free, so I did not follow the recipe strictly.  And I even made a few changes during the prep.

Here is my version of this delicious Chicken Cordon Bleu casserole

3 1/2 cups cooked rice (we LOVE rice)
3 cups cooked chicken (I used rotisserie chicken from the cold section in the meat dept)
6 slices of swiss cheese
8 slices of cut up deli ham
1 cans of cream of chicken soup
3/4 cup milk
1/2 cup sour cream
1 cup crushed saltine crackers or gluten free panko
1/2 teaspoon paprika
1/2 teaspoon parsley
1/4 teaspoon garlic salt

While I was mixing it, I was waiting for Dennis to find a second can of the cream of chicken, I decided it was too thick (for our family tastes) and added another 1/4 cup of milk & told Dennis to quit looking for the 2nd can of cream of chicken b/c I didn't want it.

Personally, I thought it was perfect that way. AND leftovers were just as delicious!  Maybe even a little better :)

Let me know if you try this recipe and what you think!

YUM!!

Today was all kinds of hectic.  I had to leave work at lunch to meet the Little Caesar Fundraising pizza kit delivery guy...65 pizza kits...I know that doesn't sound like much, but it looks like this:

After it was dropped in the driveway, I had to open and load into my car so I could get it to the parents.
The ENTIRE back 1/2 of my van was full.  It was insane.  I kept the a/c going (even though it was cool outside) to keep the food cold.  I was assured b/c it was cool out, it would be fine sitting in the car until delivery after work.  So, back to the office I went.
I left at 4:15 and picked up the girls from running club.  We went home to let out the dogs, for the girls to grab a bite to eat & for Cai to change for their newly added Wed cheer practice.
As soon as we opened the door we could smell dinner in the crockpot...it was mouthwatering!

We were in and out of the house in 15 mins.  I raced to the Church to meet the parents to pick up their pizza kits.  Because I was on my lunch, I didn't have time to load them by order, so I was separating while standing in the parking lot.  It was a bit hectic.  Once we got a majority of the orders passed out, we headed to Cai's practice where the rest of the orders would be delivered.

This practice is only for the next month to help the girls clean up their stunts.  Because there is already a practice being held at the gym, the girls were at a local park.  It was such a chilly day, but the girls did well.  I think it helped they were able to run around & get out some energy when they weren't the group working on their stunts.

When we finally walked in the door at 8:15, we were starving and exhausted.  It was so nice to not have to worry about making dinner.

The meat was still juicy and had flavor.  I don't think I used enough cheese, so on tomorrow's leftovers I will be adding a little extra.

Chicken Philly recipe

4-5 boneless, skinless chicken breasts (I used frozen)
2 sliced green peppers
1/2 onion sliced
garlic salt
water

I laid the chicken in the bottom of the crockpot & added the sliced veggies.  I added some garlic salt to about 1/2 cup of water and stirred it up.  I dumped it on top of the food, set it on low (10 hrs), covered it and left it for the day.

About 1/2 hr before we got home, Dennis shredded it (using the mixer!) added sliced swiss cheese (we were out of provolone) to the top.  By the time I got home, it was melted and ready for a hoagie bun.
We had macaroni salad with it and it was awesome.  Even the girls finished it.  There was PLENTY for leftovers tomorrow.

Yay for easy crockpot dinners!

Crockpot chicken tacos

Dennis is FINALLY back to work and doesn't get home until between 6 & 7 most nights.  After all of the running I do after work on any given day, we are walking in shortly before him.  I have decided I'm going to put the crockpot to use again.

Today I made chicken tacos.  I always use frozen, boneless, skinless chicken breast.  I only made three b/c I didn't want a lot of leftovers if the girls didn't like it. It gave us a perfect amount for each of us to have 2 tacos each.  Dennis LOADED his full of chicken, while the girls didn't.  I had a normal amount.

Also, a huge time saver, crockpot liners.  Because honestly, who wants to clean up after dinner?!!

I thought it tasted good, Bry wasn't a huge fan, but she doesn't like taco meat either.  Cai liked hers, as did Dennis & I.

I have to say, somewhere on one of those lifehack posts, I saw the easiest way to shred mean was to use a mixer.  That is the TRUTH!!!!  It literally takes a minute and it's perfectly shredded with no work!!  I LOVE IT!  Best hack I've ever used.

Tomorrow we are making chicken philly meat in the crockpot...mm...I love chicken philly sandwiches!

Tonight's easy recipe:

3 boneless, skinless chicken breast (mine were frozen)
2 spoonfuls of taco seasoning (you can add more if you like them stronger)
1/2 a block of cream cheese cut into chunks
1 c of chicken broth (could use water if you'd rather)

I dropped it all into the crockpot.  Turned it on low and it was ready in 6 hours.

We had them on tortillas with lettuce, tomato, cheese, sour cream, etc.

The only bad part about this one was that I had to come home and turn it on at lunch (only b/c I forgot to turn it on before I left for work).  Not turning it on in the am turned out to be a blessing b/c it def would have burnt if I had let it go for 10 hrs!
Tomorrow I will use my digital crockpot that turns to 'warm' after the cook time is complete.

I hope you enjoy this easy 4 ingredient crockpot recipe!

Chicken Crescent Rolls

I'm proud of myself for coming up with this recipe on my own. Even Dennis was surprised!
He kept asking me, are you sure this was all you?? Yes, it was. I saw other recipes that had a few of the ingredients together, but not one like this. Pinterest had great recipes, but none put this together and honestly, I don't see a lot with the french onion soup mix. Man, I love that stuff!
4 boneless/skinless chicken breasts
2 pck crescent rolls
Mozz cheese – I didn’t measure b/c we LOVE cheese, so we pile it on
French onion soup mix dry

Preheat oven to temp listed on Crescent rolls – usually 375

Brown chicken on both sides in fry pan. Add water to cover chicken, add 1 packet of dry French onion soup mix & cover.

Cook until chicken is completely cooked through.

Cut into chunks.

Open crescent rolls & pinch together seams of 2 triangles to make 4 different crusts. Add chicken chunks & as much mozz cheese as you want. Then add the other package of crescent rolls, pinching seams of 2 triangles together, than placing them on top of the chicken mixture & pressing the top & bottom crescents together. Sometimes we can get a really good seam, other times, not so much.

Bake for 12-14 mins (or as long as the rolls require). Serve w/green beans & rice.
Mint Chocolate Chip ice cream for dessert equals YUM!

And really, the combination possibilities are numerous. We also made these with pepper jack cheese, sharp cheese and colby.
Instead of French soup mix, we did dry Italian dressing...the crescent roll has the flavor bake right in - it's sooo good!
We also made turkey burger (I don't eat red meat, so at home we use turk burg in lieu of hamburger) and put taco seasoning in w/taco mix cheese and served w/lettuce, tomato & sour cream... (hello heartburn!)...

Let me know if you try this and what combinations you use. I'm curious to see what else other people come up with!

Smoothies - it's what's for breakfast!

In my quest to eat more healthy & for Cadence to feel full & energized in school, I have been making smoothies for us to drink in the mornings.

I know the health benefits of avocados & wondered how one would taste in a smoothie. Turns out, they taste pretty darn good!

1 avocado
1 banana
1 cup of almond milk
8 ice cubs
¼ cup of water
1 tsp of vanilla
2 tbsp of ground flax seed
mmm…mmm…good!

Cadence finished hers on the way to school!

Oreo Layer Dessert

I have seen this dessert pinned so many times I think it is probably the most popular pin on pinterest for a few weeks. That being said, I made it straight away!
picture from original pin
Oreo Layer Dessert

1 pkg of regular Oreos
1/2 c. of butter
1 lg box of instant chocolate pudding
2-8 oz cool whips
8 oz. of cream cheese, softened
1 c. powdered sugar

Crush the whole package of cookies either with a food processor, or in a bag and a rolling pin. Save a 1/2 c. to sprinkle on top of dessert when it's done. Pour remaining crumbs in a 13x9 pan. Melt butter and pour into crumb mix. Stir it up good and press crumbs in bottom of pan to make a crust.

Make chocolate pudding according to package directions and let it setup in the fridge. In a mixing bowl blend cream cheese until nice and smooth and then add powdered sugar, mix. Then fold in 1-8 oz thing of cool whip.

Top oreo layer with cream cheese mix, then pudding, then your last 8 oz thing of cool whip, and then sprinkle remaining Oreo's on top. Cover and refridgerate until ready to serve.

Duh it’s so basic anyone could make it (which is why I, not Dennis, made it) but I wasn’t overly impressed.

I doubt I will make it again. Neither of the girls liked it – Dennis doesn’t like pudding so he didn’t have any either. Oh well, it was worth a shot and at least I can say…I saw it on Pinterest & tried it!

Baked Pork Chops Recipe from pinterest

Dennis pulled pork chops out for dinner one evening & I happened to see a pork chop recipe on Pinterest that week. I started looking for it again (oops – should have pinned it the first time I saw it!) and counted down the hours until dinnertime…

There were more steps than I like, but overall, it was worth it.

Baked Pork Chops

6 pork chops
1 teaspoon garlic powder
1 teaspoon seasoning salt
2 eggs, beaten
1/4 cup all-purpose flour
2 cups Italian-style seasoned bread crumbs
4 tablespoons olive oil
1 can condensed cream of mushroom soup
1/2 cup milk

Directions Preheat oven to 350 degrees F (175 degrees C).

Rinse pork chops, pat dry, and season with garlic powder and seasoning salt to taste. Place the beaten eggs in a small bowl. Dredge the pork chops lightly in flour, dip in the egg, and coat liberally with bread crumbs.

Heat the oil in a medium skillet over medium-high heat. Fry the pork chops until both sides are crispy, or until the breading appears well browned. Transfer the chops to a 9x13 inch baking dish, and cover with foil. Bake in the preheated oven for 1/2 hour.

While baking, combine the cream of mushroom soup & milk in a medium bowl.

After the pork chops have baked for an hour, cover them with the soup mixture.

Replace foil, and bake for another 30 minutes.

This was before we put them in the baking dish – they looked superb don’t cha think?

Best Meatball Recipe - EVER!

Photobucket"/>

I was looking around Pinterest (shocker - right?!) and found this recipe for meatballs.

It sounded pretty good - but I did change up a few of the ingredients & cut it in 1/2 - here is the halved recipe and my changes in ().

Ingredients

2 tablespoons olive oil (I used Pam spray)
1 pounds ground beef (we don't eat red meat, so I used ground chicken)
1/2 cup ricotta cheese (I used cottage cheese)
1 large egg
1/2 cup dried breadcrumbs
2 teaspoons coarse salt
1/4 tsp Mrs. Dash garlic
1/4 tsp garlic powder
4 cups Classic Tomato Sauce

Directions

1. Preheat oven to 450 degrees. Drizzle olive oil Pam onto a cookie sheet
2. In a large bowl, use your hands to mix together ground meat, cottage cheese, egg, breadcrumbs, & seasonings until fully incorporated. Roll mixture into firmly packed 1/2-inch balls.

3.Place meatballs on pan & put into oven. Bake until meatballs are firm and an instant-read thermometer inserted into the center of a meatball reads 165 degrees.

4. Meanwhile, heat tomato sauce in a small saucepan over medium-high heat, stirring frequently.

5. Remove meatballs from oven and carefully drain excess grease from pan - if you use ground chicken/or ground turkey there isn't any excess grease... Put meatballs into deep fry pan & cover w/sauce. Simmer for 15 minutes more. Serve.

These are beyond delicious!!

Chicken Rollups

Photobucket
Another fantastic thing I've found on Pinterest is wonderful, wonderful blogs! One of them, Plain Chicken, has become one of my favorites.

Since I don't eat red meat, sometimes finding chicken recipes that haven't been overdone in my house is hard.
Luckily, Steph loves chicken, so most of her recipes are chicken related.

The chicken rollups recipe was pretty easy & it was yummy.

2 (8 ounce) cans Reduced Fat Pillsbury Refrigerated Crescent Dinner Rolls
1 (10 3/4 ounce) can 98% fat free cream of chicken soup, undiluted
3/4 cup grated cheddar cheese or swiss cheese (or any cheese of choice)
1/2 cup milk

Filling
4 ounces cream cheese (very soft)
2 tablespoons butter (very soft but not melted)
1/2-1 teaspoon garlic powder
1 tsp minced onion flakes
2 large cooked chicken breasts, finely chopped
1/2-3/4 cup finely grated cheddar cheese
1/2 tsp seasoning salt
1/2 tsp ground black pepper (or to taste)
2 Tbsp. milk
1-2 cup grated cheddar cheese (for topping)

Preheat oven to 350°F. Spray a 9x13 dish with cooking spray. Mix together milk, 3/4 cup cheese and undiluted chicken soup (can season with black pepper if desired).

For the filling --- (make certain that the cream cheese and butter are very soft) in a bowl, mix the soft cream cheese with butter until very smooth, then add in garlic powder. Add in the chopped chicken, onion and cheddar cheese; mix well until combined. Add in 2 tablespoons milk; mix to combine (add in a little more if the mixture seems too dry). Season with seasoned salt or white and black pepper to taste. Unroll the crescent rolls. Place 1 heaping tablespoon chicken mixture (or a little more) on top of each crescent triangle, then roll up starting at the thicker end. Drizzle a small amount of soup mixture on the bottom of the dish. Then place the crescent rolls seam-side down on top of the creamed mixture in the casserole.
Drizzle the remaining sauce on top (you don't have to use the full amount of cream sauce, just use as much as desired) and sprinkle with 1 cup (or more) grated cheese, or amount desired. Bake for about 30 minutes.

**The only thing I would change w/this recipe is maybe no garlic & real onions instead of flakes. I think the garlic left a funny flavor to it.
This is a picture from Plain Chicken as I forgot to take one...

Mound Brownies

I don’t know how many people out there are like me, but I’m obscenely addicted to Pinterest. Like, I need to go to a support group.
Anyway – one of the things I found was a recipe for Mound Brownies. Seriously – Almond Joy & Mounds are my go-to candy! I love, love, love all things coconut! I miss coconut twix!

So…here is my endorsement to this fantastically, delicious recipe!

My pic isn’t as pretty as Katrina's @ In Katrina's Kitchen, the blog I found it on..
To me it doesn’t matter how it looks, as long as it tastes mm..mm..good!

Mounds Brownie Recipe (my altered version)

Ingredients:
•1 Family Size (9x13) pan of brownies, prepared
•4 Cups shredded, unsweetened coconut (the original recipe calls for 5 1/3 cups - it's a little too much)
•14oz Can sweetened condensed milk
•1 Cup powdered sugar (the original calls for 1 1/2 c) again, i thought it was too much)
•1 Can of chocolate frosting

Directions:
1. Prepare brownies and let cool completely.
2. In the bowl of your mixer combine coconut, sweetened condensed milk, and powdered sugar until all ingredients are incorporated. (this is a VERY thick mixture - use a mixer)
3. Spread coconut mixture over brownies.
4. Place can of frosting in the microwave for 10-30 seconds (please be sure to remove foil liner and lid) until pourable.
5. Pour frosting over the coconut mixture. Let cool and set up.

Homemade Bread

Since receiving my beautiful piece of kitchen art, a KitchenAid stand mixer, for Christmas, the dreams of what to make which requires a mixer have been filling my internet searches!

One thing I have not been able to find is a good bread recipe  :(

UNTIL the wee hours of this morning - when I found this blog...  Quiver Full of Blessings where Rachel posted this post . If you're anything like me, when you see something that says Fabulous Homemade Bread, your mouth begins to water.
Plus look at this picture!  YUMMY!

The agenda for tonite - try this bread.  If this recipe is what finally gave her the results of a good homemade bread after 12 yrs of marriage, I'll be 2 yrs ahead of her!  Keep your fingers & tootsies crossed this turns out good - it's rainy & cold here, a warm, fresh loaf of bread is just what my house needs!

My Monday Meal - Chicken sandwich

Photobucket

1 pound ground chicken (we used boneless/skinless breast)
1/2 cup shredded sharp cheddar cheese
1/3 cup grated parmesan cheese
1 teaspoon minced garlic
1/2 teaspoon salt
1/2 teaspoon pepper
1/3 cup mayo
4 onion kaiser rolls, split
8 strips bacon cooked until crisp
1 large tomato - sliced
4 leaves romaine lettuce

mix chicken, cheeses, garlic, salt & pepper. Form into 4 burgers about 3/4 in. thick, making a slight depression in center of each patty (this helps keep burgers flat as they cook).

cook on grill or stove top...toast buns on in pan or on grill - add bacon, lettuce & mayo.

So yummy!

Serve w/grilled asparagus.

sorry no pics - my battery is dead :(

My Monday Meal - Cottage Cheese Pie

Photobucket

Ingredients:

1 9" unbaked pie crust
1 small onion, chopped
2 cloves garlic, minced
1 lb. ground meat – we used turkey
1/4 tsp. pepper
1/4 cup ketchup
2 Tbsp. mustard (this was too much for my family – we’re not big mustard fans)
2 Tbsp. flour
2 eggs, beaten
1 cup cottage cheese
2 Tbsp. grated Parmesan cheese

Brown together onion, garlic, and meat. Drain any excess fat. Add pepper, ketchup, mustard, and flour to skillet and cook and stir for 3 minutes. Turn this meat mixture into the pie crust lined pan.

Beat eggs and add cottage cheese and Parmesan cheese. Pour this mixture over meat in the pie pan. Bake at 350 degrees for 30-40 minutes, or until filling is set, crust is golden, and topping is set and starting to brown in spots.

To me it sort of tasted like lasagna. The kids didn’t really like it much,  (,ight have been the mustard?) but Dennis & I did. Anyway, we probably won’t make this one again until the kids are a little older….

We served it w/green beans, fresh salad & Italian bread.

For dessert – Éclair cake – YUM!

4 boneless/skinless chicken breasts

-sorry for the stock pictures - one day I'll add a real one!  :)

Preheat oven to temp listed on Crescent rolls

Brown chicken on both sides in fry pan. Add water to cover chicken, add 1 packet of dry French onion soup mix & cover.

Cook until chicken is completely cooked through.

Cut into chunks.

Open crescent rolls & pinch together seams of 2 triangles to make 4 different crusts. Add chicken chunks & as much mozz cheese as you want.
